- NOTE: This is a restaurant recipe and makes a HUGE batch of dressing. I cut it in half and still have enough leftover to share! My sister-in-law loves this and always gets the extra!.
- Variation: For a main course meal add cajun spiced grilled chicken, shrimp or steak.
Make the dressing: Add all ingredients to a food processor. Once hot, add tortilla strips in a single layer and fry until golden and crispy. To assemble salad: Cut corn tortillas into matchstick-size strips. Heat oil in saute pan; fry tortilla strips until crisp. Remove with slotted spoon, and drain on paper towels.
